Title:  Irish Soda Bread    

 

Ingredients:

 

4 cups flour

1 teaspoon salt

1 teaspoon sugar

1 teaspoon baking soda

2 cups buttermilk

 

Directions:

 

Combine dry ingredients.  Add buttermilk.  Knead until consistent and smooth.  Do not over-knead. (A mixer with dough-hook works well.  Mix on low speed until flour is all mixed in).  Pat  doughball into a circle so that it's about 2 inches thick.  With a knife, cut criss-cross across the top. Bake in a 450 degree oven for 30 minutes.

 

You may want to substitute flours (e.g. rye or oat) or add raisins to add variety to the recipe.
